    Got gifted 2kg piece of fresh tuna last night. Then this popped up this morning. Must be a sign.

    I assume you sear then roll in sesame seeds afterwards?

    Is taking the stems off the sorrel intentional? I almost think leaving them on would leave that part of the plating a touch better. I do love the garnish and the “ladder” the four right sorrels are doing.

  4. What is the trick to getting a clean slice after the sear? The edges always look gnarly after cutting. It is chilling it again?
