Looking for advice on how to plate better this is my first attempt at this style.

  1. Doesn’t rely read confit as much as hatchback. Ive never seen anyone cut potatoes that way for a “confit’. Potatoes don’t have any fat anyway so they can’t really be confit’d but thats a different issue. The sauces just do not hit. Maybe pool the big one and dot the small one around but the green chanel with the dots doesn’t work for me. Also, lose that leaf

    Weak, uneven sear on your pave. Not sure what the circular things are but they break up the rectangles I guess.

    Micro basil feels odd.

    Not a fan of the sauces; shape, texture, or color. Just adds more linearity to a rectangular plate with a rectangular potato.

    probably do a different plate.
