







I never eat breakfast but I was just feelin it today. Oddly we got a little snow this morning so the vibe was just right.
I love the contrast between the light and tangy pancakes and the big back heart attack hash. My mom made the pancakes and I made the hash.

1 lb breakfast sausage(I used green chili boulder sausage)
3-4 medium russet taters – diced
1/2 cup diced hatch green chiles
3 jalapeños – diced
1 yellow onion – diced
2-3 bell peps
3 cloves garlic – minced
1 tbsp smoked paprika
1 tbsp ground cumin
2 tsp salt
1 tsp pepper
1/4 cup chicken broth
4 eggs
Cheese (I like cheddar)
– Parboil potatoes until soft but still with a little bite, dry them and toss in a bowl to coat in potato fluff
– Brown sausage until a bit crispy, remove from pan and keep the fat in.
-Add the taters and an unhealthy amount of butter and oil. let em sit and crisp real good before stirring/flipping, remove from pan
– Add onion, pepper, and jalapeño. Sauté for a few minutes then add garlic and spices and cook for another minute
– Add green chiles and sausage back in and cook for a sec.
– Deglaze with broth
– Crack in eggs and stir a tiny bit
Pancakes
mix together:
2c flour
1/4c sugar
1 1/2 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
mix together:
2 eggs
1 1/4c milk
1 1/2c ricotta
1 tsp vanilla
1/4c lemon juice
2tsp zest
combine and mix until just barely incorporated(you want lumps)
the blueberry compote is just frozen blueberries, spoonful of honey and a squeeze of lemon. Bring to simmer in saucepan and then make a cornstarch slurry(like 1 tsp ish) to thicken it up.
