I understand this in a big way. I own a small restaurant and I’m the only one in the kitchen, I work like 80 hours a week and every single dish served here is cooked by me.
When you get a piece of equipment that does something the exact way that you want it, something that doesn’t break and is actually efficient… There are no words.
I have had three fridges go down on me in the past year (I inherited old ass equipment that was on its last legs) which forced me to do some construction and buy a new unit that I have wanted to do since I opened. Some days I just stare at this fridge and smile. I look like a moron, but it means the world when you have the equipment that helps you do your job the way you want it done.
