    This looks really nice, but the roe gets lost. I would have missed it without reading the description.

  2. What an awesome dish. Creative, sounds lovely, and looks great. I agree with the other comment regarding the roe blending in completely, but the pasta looks really cool as is and I bet the roe does add a lot to the dish’s seasoning. Terrific stuff chef.

    I like the way the roe mimics the chive oil drops personally, and the dish sounds and looks quite spectacular overall. Agree w micro greens trimming.

  4. Maybe lop off some tentacle suckers to garnish with….or put a single roe in each sucker and plate. I just think it did something else to reinforce the octopus is in the dish visually – it’s so stunning on a plate

    Looks nice, but doesn’t meet my definition for Cappalletti, this is tortellini

    Be confident enough to serve the cappletti without the grapes. They can stand on their own.
