Eggs look just a hair past soft boiled, but still really good. I’m usually shooting for “jammy”eggs, not so runny that the yolk spills out but also not getting into more crumbly hard boiled territory. These look jammy in the middle and starting to harden at the edges.

btw i’m Polish and for us it is totally normal to put hardboiled eggs in soup, e.g. sourdough soup (żurek). The base is hard to make but the taste is heavenly.

Instead of throwing the chicken directly into the ramen you could also marinade the breast or with some soy sauce, mirin, water, and sesame oil to make a makeshift chicken chashu. The eggs are like medium well soft boiled lol

If you’re buying a rotisserie chicken, then it is incredibly easy to make a stock from scratch using the scraps! Store-bought stock/broth is the enemy!!
