Did you know cheddar is a noun and a verb.
It’s a place in the UK (cheddar gorge) where cheddar originated.
It’s also a verb, cheddaring or to cheddar the curds is a process of folding the curds in a way that creates that lovely crumbly texture and allows for air gaps for crystals to for and all sorts of interesting chemical things in not smart enough to understand to happen.
Unfortunately there are absolutely no protections for what you can call cheddar, so cheddar has almost become a byword for that rubbery sweet cheap stuff that supermarkets sell globally.
Here is Jamie Montgomery (the Don of cheddar) on one of his rants about modern cheddar.
I strongly suggest a listen.
Anyway Montgomery cheddars is incredible and so earthy, but if you want something sharper I suggest Keens, made just up the road.
The big difference, after cloth wrapping Keens coat their wheels in lard preventing any oxygen ingress, Jamie allows his wheels to breath leading to a much earthier taste and sometimes bitter blue veins that some people dislike but I think are the best but.
