Made chili tonight! ❤️

This is my dad’s recipe:

Ingredients:

  • 1 Box Shelby’s Chili Mix
    • ⁠29 oz can Tomato Sauce
    • ⁠12 oz can Tomato Paste
    • ⁠2 lbs Extra Lean Ground Beef (or Ground Bison)
    • ⁠1 Smoked Sausage/Kielbasa
    • ⁠5 Serrano Peppers
    • ⁠3 Poblano (or Anaheim) Peppers
    • ⁠2 Green Bell Peppers
    • ⁠2 White Onions
    • ⁠32 oz Bag of Pinto Beans
    • ⁠Hershey’s Cocoa Powder
    • ⁠Ground Cinnamon
    • ⁠Ground Cumin
    • ⁠Ground Nutmeg
    • ⁠Paprika
    • ⁠Salt

Instructions:

  1. ⁠Place 32 oz (4 cups) of pinto beans and 12 cups of water in a big stewing pot and let soak for 24 hours.

  2. ⁠After the 24 hours, turn the pot on high heat until the steam starts raising the lid (roughly 20-25 minutes). (Have a rag or towel handy in case some water spills out.)

  3. ⁠Turn the heat to low.

  4. ⁠Add the can of tomato sauce and tomato paste.

  5. ⁠Add 1/2 cup of cocoa powder.

  6. ⁠Add 2 teaspoons each of cinnamon, nutmeg, cumin, and paprika.

  7. ⁠Add 1 tablespoon of salt.

  8. ⁠Add Shelby’s chili mix.

  9. ⁠Stir chili every 30 minutes for 6-8 hours.

  10. ⁠In an electric skillet, set temperature to 250 degrees F. Chop the smoked sausage and brown it and the ground beef/bison in the skillet.

  11. ⁠Chop up the peppers and onions and add to the skillet, stirring well.

  12. ⁠Cover the skillet and let simmer. Stir the skillet every 15 minutes for an hour.

  13. ⁠After an hour, transfer everything from the skillet into the pot. Stir well.

  14. ⁠Remember to keep stirring the pot every 30 minutes until you reach an overall cooking time of 6-8 hours. Enjoy!
