    Hey!

    Happy long weekend – thank goodness because I need it. Work was insane this week and exhausting, been waiting all week to order some Sushi and it’s on its way. ๐Ÿฃ

    Sunday: Eggplant Parmigiana with Thin Spaghetti, and homemade Honey-Wheat Bread. Eggplant was excellent and the bread was very good. I’m learning a lot about baking with whole wheat flour.

    For dessert I made an Apple Crisp Bread and it was incredible, layered with Pink Lady Apples, Brown Sugar, and Cinnamon.

    Monday: Air Fried Chicken Wings with Broccoli. Super basic but good, simple, and did its job. Basic seasonings and they were crispy. Of course, fried is the best but for a Monday this is the move! – Broccoli was just frozen broccoli that I roasted to pretend I’m healthy.

    Tuesday: Garlic-Butter Steak Bites with Jasmine Rice and Avocado. Again, this is simple but so good. Used Ribeye and the fiancรฉ and I both love this meal. We normally reserve it for the weekends but YOLO.

    Wednesday: Baked Potato (haha!) By then, motivation was waning and all I could fathom was sticking a potato in the oven, topping it with cheese, bacon, green onions, and greek yogurt. It’s not the greatest but filled me up and I resisted my urge to order takeout! A win is a win.

    Thursday: Chicken and Black Bean Quesadillas – Used whole wheat tortillas, and cooked some chicken breast with Taco Seasonings, Vegetables, and a can of black beans for added fiber. My fiance’s only critique was too much cheese. Cause yeah, I had to use up my cheese and went overboard.. but I’m not sorry about it!

    ~ A rough week of life but had some good meals. Happy Memorial Day to everyone celebrating this weekend โœจ

    Can you give more detail on Tuesdays steak bites please? Those look GOOOOOOD!
