
This cheese is actually a curse – you are doomed to be a hapless addict to its goaty, creamy, seductively smooth charms. If you see this at a good cheese shop, avert your eyes and keep walking, lest it reel you in like a Minnesotan would a fat walleye.
In all seriousness – this is one of the few imported soft-ripened unpasteurized goat cheeses still sold in the USA. Produced from the raw milk of mostly Roccaverano local breed goats in the vicinity of the village of Roccaverano, in the Langa Astigiana region of Piemonte south of Torino and Asti. Hard on the wallet but it is worth every penny.
