A Japanese hot pot dish, inspired by a Chinese hot pot dish. Cabbage is a cheat code; it’s cheap, filling, fibrous, and gets really good when cooked in a flavorful broth. It’s also stupid versatile.
Two tablespoons of dashi, shiitake mushrooms, scallions, bean sprouts, and soy sauce make a great soup. Simmer shaved beef before serving up. Ad a dash of lemon, sambal, and chili crisp to kick it into gear.
A fantastic noodle bowl that’s customizable and filled with veggies.
