    If I’m feeling fancy, Boursin, or something with truffle, like Toma or Pecorino. Otherwise, goat, swiss, or cheddar!

  2. Gruyere for me, especially in an omelette with various other veggies and or meats. Mushroom, asparagus, and sausage is probably my favorite.

  3. I made breakfast burritos (eggs, sausage, black beans, cheese) with pepper jack recently….great combo.

    But I do a spinach bacon scramble that I love with Swiss.

    Cheddar & parmesan also go well with eggs. Is there a cheese that doesn’t go with eggs?

  4. On eggs? It would have to be a non-melter like feta or cojita. Maybe something grated like Parmesan.

    I want melted cheese inside the omelette.

  5. I’m with you, cheddar. Most often I do soft scrambled eggs with some cheddar cheese and a buttery slice of homemade sourdough 🤤
