I’m assuming it’s mold, but I would hate to toos it out if not necessary.

    the little crystals or do you mean the differently colored cirlces?

    crystals are tyrosine, and hella yummy. the different colored circles happen when the cultures ripen the cheese differently in those spots (tend to be softer there). all natural, and safe.
