Hamburg Steak and Fried Potatoes

    **Hamburg Steak**

    Mix together 250 g minced beef, 250 g minced pork, 1 finely diced shallot, 1 grated clove of garlic, 1 tsp chopped marjoram, 1 tbsp mustard, salt and pepper, 1 egg, and 1 bread roll soaked in milk. Form six patties from the mixture and fry them in a pan with clarified butter and sunflower oil over medium heat for 10–15 minutes per side.

    **Fried Potatoes**

    Peel 200 g of fresh potatoes and slice them into rounds. In a pan, gently render 100 g of diced bacon over low heat, then add clarified butter. Increase the heat and fry the potatoes over medium‑high heat until browned to your liking. Add 1 diced onion, and once the onion is cooked, stir in 1 beaten egg and sprinkle with parsley.
