Harbison is one of my faves, Bayley Haden blue is terrific.
Their collabs are great too, the Cabot Clothbound cheddar is amazing as well. They do a lot of aging of other producers cheeses in their cellar.

One of my favorites.
It’s delicious spread on a square of 65% dark chocolate instead of bread/crackers, by the way.
Also delicious is French toast with a fairly thick layer of Willoughby on top instead of butter (then maple syrup as usual). Especially if you use raisin bread as the bread.
