Used turkey bacon. Just one strip, crumbled. So good!
4 cups chopped romaine lettuce or mixed greens
1 cup cherry tomatoes halved
1 cup shredded rotisserie chicken skin removed if preferred
4 slices turkey bacon cooked and crumbled
½ avocado diced 2 boiled eggs sliced (optional, for extra protein)
¼ cup shredded cheddar or mozzarella optional
Dressing:
⅓ cup plain Greek yogurt
1 Tbsp light mayonnaise
1 tsp Dijon mustard
1 tsp lemon juice
1 garlic clove minced (or ¼ tsp garlic powder) Salt and black pepper to taste Splash of water or unsweetened almond milk to thin if needed
Instructions:
Place the lettuce and cherry tomatoes in a large bowl.
Add the shredded chicken, turkey bacon, avocado, eggs, and cheese.
In a small bowl, whisk Greek yogurt, mayonnaise, mustard, lemon juice, garlic, salt, and pepper until smooth. Thin with water if you prefer a lighter consistency.
Drizzle the dressing over your salad and toss gently.
