
This is chang fen (rice noodle rolls) that I fell in love with about a decade ago when we used to stay in China.
Prawns, beef and pork versions were all available, each accompanied by greens wrapped in silky thin rice sheets.
The pork ones were always my favorite. Spread over soy sauce, it was pure breakfast bliss, simple, light and unforgettable.
