I had this at a restaurant yesterday and had to make it again today myself. Just wonderfully refreshing in the summer heat.
There are different recipes out there. I just used lemon juice, salt and pepper as dressing. The original recipe also had honey, which I skipped and didn’t miss because the melon is sweet enough for me already.

I get the watermelon. I get the mint… but I’m lost on the Feta. Is it like a chicken and waffles type of situation?

This is a summer staple in restaurants where I live, and I love it. Every time I have it outside (and pay $20 for it 😅), I have to remind myself how easy and cheap it is to make at home lol.
Best combo, looks delicious! I like adding tomatoes and cucumber to mine as well
