    Genuine questions, are you sure about the amounts for sour cream and cheese? 5 grams is a teaspoon. Do you count the oil/fat used to pan fry the potatoes? Also, what’s the red sauce? I love adding hot sauce to potatoes like these!

  3. The best thing about calorie counting is I’m not afraid to eat things like potatoes or bread anymore. I just make sure to measure/weigh everything.

    Scramble some esteemed broccoli with those eggs and/or cauliflower. So yum. Adds flavor not too many calories.

    One of my go-tos for dinner when I’ve had a bigger lunch is a protein (chicken breast or salmon usually) and a good sized baked potato with little cheese and sour cream, sometimes salsa. I love baked potatoes so much especially the skin

    Have you ever tried plain Greek yogurt instead of sour cream?? Tastes the exact same to me!

  8. I used to thing potatoes were “bad” for me bc carbs. Now that I eat so much protein I find they are filling without making me feel ravenous later. This looks so good!

    Also – cooking and cooking (can reheat and have jot though!) potatoes changes their starch to resistant starch which is essentially prebiotic fibre to feed your gut and lowers the GI so batch cooking potatoes to use later is really good too 🙂
    Potatoes truly are the best!

    I made a potato egg scramble tonight for dinner! Chucked in a bunch of veges, was amazing! Your potatoes look nice and crispy, do you cook them first? I softened mine and chucked everything on the pan, was nice but I reckon the potatoes could’ve been better…

    On Instagram there’s a woman HighCarbHannah who I make a lot of recipes from. She makes a great cashew sour cream (no dairy) that is delicious and would cut those calories WAY down. Great on potatoes

  12. I always thought potatoes had so many more calories than they do, but it’s just the fried ones or when they are served with a ton of butter. I’ve been throwing them in my chicken curry crockpot meals recently and I am so full after

  13. I keep the skin on and chop into fry shapes or dice them, then hit with some good bbq seasoning and air fry until crispy.

  14. I made this today for lunch! I pretty much copied exactly what you did except I didn’t have sour cream so I used cottage cheese. It was great and I’ll probably make it pretty often, thank you!!
