  4. I love the idea of this, I’ve also tried scallops with a dashi broth…the problem I had was the broth was so thin it barely flavored the protein. I tried making it more concentrated and just made the broth inedible while still barely adding flavor to each bite of the fish. Any ideas on what I was doing wrong?
