As much as I love sharing my recipes, this is an old family recipe from a good friend of mine from southern Louisiana that he was kind enough to share with me years ago. Suffice it to say it’s a chicken and sausage gumbo using chicken quarters, green onion smoked sausage, pork Tasso, and a homemade roux.
