[Homemade] French Butter Cookies

    French Butter Cookies

    Makes 5 large cookies

    3 oz unsalted butter, softened

    1/2 cup powdered sugar

    1 egg yolk

    1 tsp vanilla extract

    1 cup cake flour

    1/4 tsp fine salt

    1/4 tsp baking powder

    For the egg wash:

    1 egg yolk

    Method:

    1 In a bowl, mix the softened butter and powdered sugar together with a spatula, spoon, or even by hand until smooth. Do not whip or cream it.

    2 Mix in the egg yolk and vanilla extract until fully combined.

    3 In a separate bowl, mix together the cake flour, salt, and baking powder.

    4 Add the dry ingredients to the butter mixture and mix just until a dough forms.

    5 Roll the dough out to just under 1/2 inch thick between parchment or on a lightly floured surface.

    6 Chill the rolled dough until firm.

    7 Cut with a 3 1/4 inch round cutter and place into 3 1/2 inch tart rings or molds on a parchment lined sheet tray. Reform the scraps as needed to make more cookies.

    8 Brush the tops with the additional egg yolk.

    9 Use a fork to create a crosshatch pattern after egg washing, going one direction first, then the other.

    10 Bake at 350Β°F for about 15 minutes or until deep golden brown.

    11 Let cool slightly before removing from the molds.
