Ran a special and wanted to share and hope to get some good critiques. I did smoked swordfish with a coconut/ginger vin split with dill oil, fresh cucumber, blood orange and Aleppo pepper

  1. On paper it sounds alright, I’d try it if I was feeling adventurous.

    On film it looks pretty rough, like Saturday’s 3am kebab coming up rough.

    I can’t tell where the fish ends and the sauce begins or the other way around. The other elements are strewn about without thought or shape and your little garnish is messy. The whole thing is very one-dimensional and not in a good way. The plate really doesn’t help either because it’s not providing contrast against the very white/light elements so things get more lost.

    I’m not bashing you for this because I think the idea definitely has some legs, it just needs to be fixed up a bit.

    Instead of grouping the cucumbers, they should be spread like the citrus bits, I think.

    Maybe group some sauce dabs instead.

    Also a bit more green herby garnish bits
