    Watermelon was compressed with basil and mint. A previous plating of this dish included candied pistachios as opposed to just roasted ones!

    The dish needs to be centered.

  3. nice and pretty. love the height. i think maybe a smaller size plate, like one of those medium salad plate/bowl things, and centered like someone else said.

  4. Looks and sounds very refreshing! I love the generous layer of feta. Agreed with other comments that centered plating would be better. Maybe also toss the microgreens with a bit of the vinaigrette to give them a bit of gloss and flavor.

  5. I think the dish is really pretty and the choice of ingredients sounds lovely and delish! I would definitely want to try this especially to have a taste of the watermelon 😀

    The plate does seem a little large in terms of presentation, but if you could organise the ingredients to form a crescent shape near the circumference of the plate, it would increase the aesthetic appeal in my opinion. Would love to see a version of that in the future if you ever try it. 👏🏻👏🏻👍🏻

    Could you make compressed watermelon with home vacumn sealers? I’ve never tried compressed fruits but I also dont want to shell out 1000 dollars on one.

    Love the plating and use of the smaller elements. How did you make your vinaigrette? I’m having trouble using ginger in a context such as this. Hope all is well, thank you chef!
