Looks delicious. I would also potentially consider a single larger quenelle of the pesto in the center to really let you see the scallops.

Great use of the shell.scallops are cooked perfectly.but would have liked to see more sear on the scallops.pesto is way too much as it takes away from the delicacy of the dish.

I love it as a tapa. I actually disagree with the comments about the pesto being too much on top. I imagine that the nduja scallop and pesto marry quite nicely, and I’m a huge proponent of “building a bite” for the customer like this. This plating tells the diner exactly how the chef wanted you to eat it, and the chef is to be trusted
