Day 1801 of posting images of cheese until I run out of cheese types: Pyramid Scheme

    I’m using stock images but I am always on the lookout for new cheeses to try whenever I go to the store. Credit to various cheese websites, resources, and sellers for the cheese images and cheese facts. If any of you know some cheeses that I haven’t done yet I would love some input!

    Here is your daily cheese facts: This cheese is made by Champlain Valley Creamery. Pyramid Scheme is their pyramid shaped triple cream with a layer of vegetable ash between the paste and rind. Ash, or food-grade activated carbon, has been used in cheesemaking for hundreds of years. However, it is not approved for organic production so though made with the same milk as our other cheeses, Pyramid Scheme is not certified organic. Both the shape and ash layer change the ripening of this cheese so you get even more of the creamy, grassy flavors of the milk. And the layering of white mold, black ash and yellow paste is just aesthetically cool!
