  1. Little less risotto and get some color into it somehow. Perhaps make it a bit less watery so it holds a shape better instead of looking sloppy.

    Veggies and fish are nicely done.

    If you grated half a red beetroot into that risotto 5 min before finishing the red would be an awesome pop. Just a thought but does look delicious 🀀

  3. I’d go for a harder sear next time. Let that filet cook almost all the way through on one side before you flip it. Your risotto looks a little loose. Maybe a touch less cream before you plate. As far as color, maybe some carrot, red pepper or something colorful with your veggies to make it pop. Lemon and thyme is the perfect flavor combo for halibut so that makes sense. Also, I’m an oldschool chef, so maybe times are changing again, but I never like to see anything on the rim of the plate/bowl. It’s a picture frame. It should be clean and simple.
