I absolutely adore what you did with the eggplant. That looks simply gorgeous and I’m going to have to copy that presentation. Only thing I might change is to give a bit more shape to the mushrooms and/or maybe add a garnish to spiffy them up. I’m sure they taste incredible, but they look a little pedestrian next to the other components. Great dish!

I would remove the mushroom and let the egg plant stand on its own. Gorgeous colour though.

Looks great and Iām sure it tasted better! May head the other comment about simplifying the dish a bit. However it looks really tasty. Other not maybe a white or more neutral colour dish. The green plate competes with the other colours! With all that bullshit said it looks like it tasted good and for your sake I hope it did too.
