risotto, chicken with lime-honey marinade, peas and zucchini, pistacio. what would you optimize?

  1. Bigger and shallower plate, smaller portion, risotto should not be that thick, reduce cooking time for chicken, it’s very overdone, and I’d fry zucchini’s for a shorter time on a higher temperature. And maybe don’t put it all on top of risotto. I hope I didn’t hurt your feelings 💙
    But ingredients fit very well together! When plating, go by ‘The beauty is in simplicity.’

  3. More emphasis on the risotto and less about the chicken and veg. Have those complement the risotto, not compete with it

    You spent that much more time and effort on the risotto and yet you undercut it with seared chicken.

    this is a lot for a restaurant portion. for home cooking, whatever sails your ship is the rule. keep on going and have fun!

  5. More browning on the zucchini, pull the chicken earlier. A little garnish would have looked great! The risotto is the best looking part in my opinion, however I would have liked to see it more than covered by the rest. I say 3.5/5 Chef, looks pretty decent, would eat that. Just needs some polishing

  6. Allow the risotto to be your star … less cook time on veggies, so the colors pop and nutrients stay.
    Chicken I would make medallions and not over cook.

  7. Perhaps dice everything so it can be eaten without a knife, risotto should be showcased, bot covered up

    Cube the zucchini add it to the ris slice the chicken and fan it on the side the ris looks decent it’s not running all over the plate it should almost stand up on its own if you have broken the starch coating of the Arborio down with proper technique to the guy who said cook the veg less for more nutrients fyi that raw/less cooked veg has more nutrition is only half true some vitamins ect need cooking to pull them out or to break the food down so your body can process it fully to the people saying the chicken is over I’m not 100% sure it’s honey glazed that could just be caramelization on the outside Mby try searing it without the honey/lime and adding a sauce it it after this could also be ringed around the plate for garnish oh and where’s my herbs at? Overall I would eat that just some tweaks for presentation
