  1. I whipped 75% of the beans and left the remaining unprocessed. Served the unprocessed beans and sweet potatoes on top so it wasn’t so homogenous. Finished with crispy blue oysters and a little more of the paste + extra chili oil.

    I also just treated myself to a robot coupe so I was excited to put it to work with this one!!

  2. If you mixed the fungi’s with a little dahi (Indian yogurt) you could’ve called them blue oyster cultured mushrooms

    OP, have you heard of a chinese dish called 老耐꓋芋? Its a chinese dish of mashed potatoes with pickles and crunchy stuff mixed into it and your dish reminds me of it.

    Btw, is this supposed to be a shared platter or a main course for 1? If its a shared platter, may i recommend pairing ot with flatbreads /roti and pickles if its a main course for 1?
