  1. For an heirloom tomato I would not concasse, you want the brightness and all the flavor to pop when you take a bite. Just cut, season, plate. Otherwise, looks good for a straight veggie dish. You can always use purple cauliflower, or romanesco for some extra color. Asparagus heads for height. Would love to try this dish.
