If you’re insistent on the three levels in your picture, I would definitely put the top one on the side with the paste as the main view rather than the rind.
Unfortunately, the business got Covid-ed (my word for a small business that never ever had a lick of a chance of making it out of the times of Covid) but I highly recommend going through the Instagram for Mission Cheese in San Francisco. There’s tons of places to get an aesthetic inspiration, but I think Sarah Dvorak’s vision of simplicity and beauty would really help direct you.
I actually am a cheese professional and not just talking out of my ass. There’s just a little bit too much going on in the stack if I’m honest.
