Components:
Peach, ginger, & bourbon compote
Pecan & chipotle crumble
Buttermilk peach espuma
Peach caviar

    It looks like an aberrated over medium egg on toast. I’m perplexed but would try it.

  3. That espuma looks dope. Can you share how you make it? Is it just heavy cream based? Or a thickener in buttermilk?

  4. Wow. How many peaches does it take to get one serving of those perfect cuts? I would imagine most of the peach would end up as byproduct.

    This is very original. Maybe too shiny, some cinnamon powder on the side to confuse the eater more?
