



Peach crumble is a seasonal dessert that my family loves every year. I decided to take that classic Southern dish and reimagine it with fine dining. Please enjoy!
Components:
Peach, ginger, & bourbon compote
Pecan & chipotle crumble
Buttermilk peach espuma
Peach caviar

That espuma looks dope. Can you share how you make it? Is it just heavy cream based? Or a thickener in buttermilk?
Wow. How many peaches does it take to get one serving of those perfect cuts? I would imagine most of the peach would end up as byproduct.
This is very original. Maybe too shiny, some cinnamon powder on the side to confuse the eater more?
