Have never seen a macaron with anything other than a gel/mousse/whatever filling but this sounds like a delicious and unexpected combination of flavours

Sounds fascinating and delicious, flavor wise. I do miss the top of the macaron, but makes sense, maybe the base can be a touch bigger to correspond to the quenelle. Not a fan of the pillar of salt placement lol
