Yellowtail Ceviche, sweet onion, celery, herb sauce, white soy, sesame
Sauce is made from cilantro, scallion top, Serrano chili, garlic, ginger, white soy, maggi, sesame oil, lemon juice to order. Super delicious. Light and bright with great textures.

All of the greenery looks very messy, especially with the giant flower sprig on top. The knife work on the fish is very uneven as well, and the color of the plate makes the ingredients feel lost.

This would probably look a lot better on a plain white plate, the extra green is too much

Looks amazing but the florals are distracting and maybe a bit too much. Reducing those and a neutral/contrasting plate would make it for me! Sounds yummy regardless

I see a beautiful, very oldschool presentation in the best possible way, and I love it.

Are those flowers on top edible and if so, do they really add to the dish? They do not look edible, the stems look woody and hard and rule #1 is that everything touching the food needs to be edible. Is the guest supposed to know to pull the flowers aside and not eat them? Were the flowers grown organically so you’re not adding pesticide to the dish? Besides that, ceviche is a fairly specific thing with fairly specific flavors. You’ve added a few Chinese ingredients, so I’d be inclined to call it Poke and not ceviche. Aguachile is having a moment as well, maybe you could get away with that.
