  1. Dish looks awesome. Not sure if all the sesame seeds would overpower the flounder. But I’d smack it.

  2. The amount of sesame seed is overwhelming. Just crust one side of the fish. I would be sad if I was served a piece of fish without at least one side of good sear. It’s nearly essential.
    Go a little easier on the micros also and otherwise I think this is a very nice plate.

  3. The micro arugula looks super sad, just saying. Maybe if you shocked it in ice water and put a neat little ball on top? Also why not do the same with the radish or julienne it? The coins don’t really add anything but color in my opinion. The gazpacho sounds great, and I’m sure the fish is amazing as well. Sorry one last thing, that’s a super thick crust of sesame seeds. I can’t really even see the fish which is kinda the whole point of a seared fish dish right? Sorry to complain I’m not shitting on your dish. I’m sure it is amazing just trying to help you improve it
