  1. Looks absolutely beautiful! Is this one of the earlier courses to a tasting menu? The cabbage cup outer layer almost looks like paper. Where’s the XO added in?

    Nice job. Elegant. What are the white flowers? Possibly Chinese white flowering broccoli?

    Looks absolutely gorgeous. If anything, I feel the colour of the plate and the top of the food overlap a little too much. A darker or more even coloured plate would make the center “pop” more. But the dish itself looks like a fairy tale, I love it.

  4. I want to love it, I really do because it’s a work of art! Just a personal matter and I’m old school, but flowers on dishes annoy me! I’m sure it tastes fantastic though!

    This is def not chamomile nor wild arugula but alyssum. Smells like honey a bit but they are actually in the brassica fam, along with cabbages, broccoli and mustard.
