  1. I hate to say it, but for me the apple chip is a complete turn off on what would otherwise be a truly gorgeous dessert. I think I get what you are going for, but especially with the stem and dried leaf at the bottom, I think it detracts from, rather than adds to, the dish. Otherwise, looks sublime. Just my $.02. Beautiful work.

    What is the sauce around it? Might be nicer looking with that slice crumbled so you get a sweet crunch of cinnamon sugar. Nice plating.

  3. I don’t mind the apple chip as much as I mind the stem on it. It adds to the ascetic but you wouldn’t want to eat it

  4. Ok! So, the apple chip.

    If I were to guess, you sliced your apple on a mandoline or meat slicer, then laid on a tray and dehydrated it.

    This sorta works, however you get the result you have seen: it turns brown as it dehydrates, and the texture is…… just ok.

    To improve your chip, just add one more step to your process. So you cut the chip, then, simmer the apple slice in heavy sugar syrup (2pt sugar, 1pt water, by weight) for 20-30 seconds. Then gently remove the slice, allow the excess syrup to drip off, and then place on a silpat and set in the dehydrator.

    This process should end with apple chips that retain their white and green color, with a very crisp crunch.

    I only mention the chip, because the rest of the desert looks really well done!

    What is the sauce on the bottom of the plate?

    The stem is the only thing I think is off about this. Other than that the components all seem to look really appetizing. 🙂

  6. Please take the seed pod and core and stem out and make a real gosh darn apple chip. But it looks cool!!

  7. The sauce isn’t necessary, it’s just giving the tartelette a soggy bottom.

    It’s going to look fantastic with a nice clean apple chip using the method the other commenter said. Mke sure you use silpat and not paper to make it really flat.

  8. I would eat that apple chip. It looks good. I also like the sprinkle of cinnamon on it. Looks really pretty all together! Good job!
