Interesting concept but the plate is very distracting for me. I’m having a hard time figuring out what’s going on with the food because of how busy the plate is.

I kinda dig the plate, but it does need something to give separation from the plate. Other than that, looks great

Thanks for the comments, guys. It may be tough to see with the angle, but the food is plated on a glass plate set on a fabric-lined base plate. It was for a dia de los muertos themed tasting menu, so we were definitely going for a bit less subtlety and more theater than we typically do. The pastry is filled with guava paste and panela cheese. On the plate, there’s a whipped cheesecake made with the same panela, a few dots of pink guava fluid jel, and some pineapple sage flower.

Honestly I think the plate is cool, maybe it’s not the most optical Instagram bait setup but in person you will see it more from the side and in motion as it’s set down, you’ll have no trouble seeing what’s on the plate. I would like to see more detail here of that whipped cheese thing, it looks symmetrical and there is some detail, is it a skull or something? Looks super interesting, I think in person it would be a banger.

I think the plate is appropriate for the theme however… it is a bit busy if it weren’t for the event. Keep the plate, maybe do something saucy to neutralize a canvas without completely covering the plate? That’s my only take but I think it’s awesome!!!

Cool plate. Not for the presentation though. A mint sprig would have gone a long way here. The star is the pastry, not the plate. There’s no cohesion here. Just looks like it was plopped on a busy plate. Pastry looks on point. But maybe keepmit simple next time. Less is more. Justvmy 2 cents but what doni know
