Big Salad with Dressing; Under 400cals. Incl. Chicken!

Roasted a huge tray of veggies (w/olive oil) last night. Used some for dinner and the leftovers are delicious on salad!!

I also buy several rotisserie chickens on the weekend and shred each one, bag it up and freeze to be defrosted as needed. Makes protein a breeze!
