  1. The plating is solid, the garnishes are not. Random leaves sprinkled on it just takes away from the overall presentation. It throws off the symmetry and lift of the rest of the plate. Makes what is an otherwise elegant presentation look sloppy.

  2. That is an obscene amount of molasses for the amount of prawns imo. Also this is personal preference but I don’t see the appeal of pomegranate seeds. The first bite is nice with the explosion of juice but once that dissipates you’re left with mealy seeds. Prawns, being the focal component here, have a tender texture that will be lost long before you finish picking seed debris out of your teeth.

    I would look at reworking this pomegranate combo you’re going for. Something like a chutney or jam would be more refined, balanced and a more pleasant eating experience.
