While I think the execution is novel I would actually prefer to see what I am eating and this feels like an attempt to cover it up.

I think if you “hide” the main ingredient, it’s a good idea to show it on the decoration. This avoids reluctance to eat and it prepares the person eating to the taste of crab.
In this case it would also add some white/orange to the mainly green dish.
I don’t know the English word for lisibilité, but playing with it is, I believe, for the advanced and/or brave chefs.

The (micro-)greens look a little wilted & the flower petals seem out of place too – I think you’d have a cleaner presentation if you skipped those. Maybe one nice blue borage flower, placed centrally on your crab cylinder? Would make sense in terms of taste as well.
