  1. Looks fantastic! No doubt tastes fantastic too. I don’t know what the competition presented, but this is an impressive production from a limited palette of ingredients. You’ve got the layering of textures right, and none of the elements seem strained solely for visual effect. Kudos.

    Does anyone else find foams both aesthetically gross *and* unpleasant as a mouth feel/texture?

    I’m hardly a purist, I love the modern techniques, I love visually interesting things for the sake of it. I just don’t get foams.
