  1. Chef, I’m going to be brutally honest; I think your plate looks great, but that roulade looks a little dry to me from here. I like everything else though.

  2. Looks great. Nice clean bone. But use broccolini. Broccoli florets just look cheap. Lol. Broccolini lays nice and grills nicely to ass some char flavor

  3. I first read that as “chicken two ways with blood” but that’s a me thing not a you thing. I would maybe change the blood colored plate for a little more contrast with the sauce. Or just lean into it fully, whichever
