I’ve been really curious about this cheese for a while. I will be making a cheese board this Christmas. But I am clueless on what to pair it with. Anything helps!

  1. Mimolette is cut in cubes and then, believe it or not, a liitle dijon mustard is added to it.
    It goes well with strong flavoured wines like medoc or a highly flavoured beer. You can make a sauce with it by melting it and then dip in your crisps or veggie sticks, or if you prefer, on leaves of endives with some dry cured ham.

    I just ate some slices yesterday as a snack with cosmic crisp apple slices and it was tasty!

  3. Over the years of tasting events we’ve always paired the more aged Mimolette with hearty red wines, dried meats, cherries, dates and crisp apples. One event we featured a very young Mimolette and paired it with Gin. That was a popular combination.
