I’ve actually made this and it is DELICIOUS. My only change is to add a little sweetener to the slaw/kimchi mix. OP used low cal vegan mayo instead of regular calorie vegan mayo. Also the tofu in the pic was air fried before finishing in the pan.
Note – vegan kimchi can be found at Target and Walmart and there are at least 5 brands I saw on Amazon.
1 garlic clove
1 oz fresh ginger
1 tbsp gochujang
2 tbsp peanut butter
1 tbsp tamari
1 tsp turbinado sugar
1 tbsp sesame oil
14 oz organic extra firm tofu
4 oz coleslaw blend
2.8 oz vegan cabbage kimchi
3 tbsp LOW CAL vegan mayo
6 tortillas
½ oz fresh cilantro
Salt and pepper

a late reply but this is welcome! I just got The Korean Vegan cookbook and had a Korean friend of mine take me to the Korean grocery to stock up on stuff like gochujang so I’m searching out recipes!
