I really like this. One thought, maybe a smaller piece of the apple paper or a small additional garnish to add a pop of color, as it all reads a little beige. Beautiful overall and the description sounds delicious.

What is, flavor wise, the purpose of 4 micro greens haphazardly thrown onto the plate?
This dish needs color but micro greens are not it.
