    I have always hated this treatment of octopus.. I am assuming red cabbage juice. First of all, gross, second of all, it looks so unnatural to the eye.

    Octopus already has a beautiful colour.. why would you fuck with that

    I don’t serve or eat octopus anymore (ethical reasons) but that is so stunning, I’m reconsidering that rule.

    This is beautiful. Stunning. Having had a pet octopus, I can never eat them again but this plating almost makes me reconsider that.

    I wonder what other seafood might work as well?

    I love that you roasted the cabbage first – high heat brings out the flavors of cruciferous vegetables in a way that truly brings me joy.

    Love even more than you carried that over with the summer veggies, but sweet ones to counter that bitter of cabbage and char.

    Adding freshness and acidity in the finish is exactly what you needed to bring it all together. Much love chef!

    I respect the effort it takes to make food that looks good, but am rarely impressed. But when someone manages to make a stunningly delicious dish that also happens to look amazing too – that’s when I’m wowed. This is a stunning plate that makes no sacrifice in terms of flavor/texture/aroma for its beauty – much respect.

  13. Fantastic color composition. The Octopus is the main focus of the dish while the peas, carrots, and other items give a pastel contrast. Is the chimichurri underneath?
