  1. If you fry the capers you will still get the brininess and it adds a different textural component, really good on tartar. Very clean dish

  2. Very nice clean platting. I feel like the tatar could have a sharper edge might not be possible though

    Never seen the appeal beef of tartare (I’ve tried it ofc), but if I was gonna give a whole portion a go it would be for this. Looks amazing.

    I like the Tatar wreath and it looks delicious.

    Only criticism I’d have is that the small pieces of torn lettuce don’t look the greatest. Maybe some wild baby arugula or mixuna would add a nice peppery freshness to the Tatar and would look stunning.
