  1. In my opinion it just looks very messy. It looks as if everything was put on the plate at random. The beef tartar should be front and centre but it’s off to the side. I think the potato chips detract too much attention from the tartar, I would be tempted to get rid of them.

  2. Not sure how I feel about this. I’m a big fan of steak tartare, and I love oysters, but I’m not sure I’d ever put them together like this. The emulsion sort of grosses me out. I feel like the only thing that should ever be in an oyster shell is an oyster.

  3. What is the charred scallion component, and why is the scallion charred in the first place?

  4. The plate is beautiful, but I’d ditch the chips. Too much stuff on the plate. Ditch the mushrooms too and add a small crispy fried oyster on top of the tartare so it’s a surf and turf. I think the tartare, the sauce and a fried oyster in the oyster shell would be a great bite.
